  • 2 cups cooked turkey (shredded or diced)
  • 1 cup mixed vegetables (peas, carrots, corn; fresh or frozen)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup grated cheddar cheese
  • 1 cup seasoned breadcrumbs
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté diced onion and minced garlic for 3-4 minutes until soft.
  3. In a large bowl, combine cooked turkey, sautéed onions, mixed vegetables, cream of mushroom soup, thyme, salt, and pepper; mix well.
  4. Stir in half of the grated cheddar cheese before transferring the mixture to a baking dish.
