  • 1 lb Italian sausage (sweet or spicy)
  • 1 lb Brussels sprouts (halved)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until golden brown.
  2. In a skillet over medium heat, cook crumbled Italian sausage for 5-7 minutes until browned. Add minced garlic and sauté for 1 minute.
  3. In boiling salted water, cook penne according to package instructions until al dente. Reserve some pasta water before draining.
  4. Combine cooked sausage with roasted Brussels sprouts and drained pasta in the skillet. Add reserved pasta water to create a sauce.
  5. Stir in freshly grated Parmesan cheese until melted and serve hot.
