Instructions
- Preheat the oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until golden brown.
- In a skillet over medium heat, cook crumbled Italian sausage for 5-7 minutes until browned. Add minced garlic and sauté for 1 minute.
- In boiling salted water, cook penne according to package instructions until al dente. Reserve some pasta water before draining.
- Combine cooked sausage with roasted Brussels sprouts and drained pasta in the skillet. Add reserved pasta water to create a sauce.
- Stir in freshly grated Parmesan cheese until melted and serve hot.
