- 1 can (15 oz) kidney beans, rinsed and drained
- 2 tbsp chili powder
- 1 cup sweet corn (frozen or canned)
- 1 box (8.5 oz) Jiffy corn muffin mix
- 1 large egg
- ½ cup milk
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add chopped onions and minced garlic; sauté until golden.
- Add ground beef; cook until browned (5-7 minutes). Drain excess fat.
