  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 tablespoons chili powder
  • 1 medium onion (chopped)
  • 1 bell pepper (chopped)
  • 1 cup frozen corn
  • 1 box (8.5 oz) cornbread mix
  • 1/2 cup milk
  • 1 large egg
  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  3. Add chopped onion and bell pepper to the skillet; sauté for about 5 minutes until softened.
  4. Stir in black beans, diced tomatoes, corn, and chili powder; simmer for about 10 minutes.
  5. In a bowl, combine cornbread mix with milk and egg according to package instructions; mix in half of the cheese.
  6. Spread the chili mixture in a greased casserole dish; pour cornbread batter on top.
