  • 4 garlic cloves
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss chopped carrots, onion, and garlic with olive oil, salt, and pepper on a baking sheet.
  2. Roast vegetables for 25-30 minutes until tender and caramelized.
  3. Transfer roasted veggies to a large pot and add vegetable broth; simmer for 5-10 minutes.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Stir in coconut milk and adjust seasoning as needed.
