  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together sugar and butter until light and fluffy. Mix in pumpkin puree and vanilla extract until smooth.
  4. Gradually fold in dry ingredients until just combined.
  5. Scoop rounded tablespoons of batter onto prepared baking sheets and bake for 12-15 minutes until they spring back when pressed.
  6. While cooling, beat cream cheese with powdered sugar until creamy; add vanilla extract.
  7. Once cooled, spread or pipe the filling onto one cookie half and top with another to assemble.
