  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 1 large sweet onion, chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 cup full-fat coconut milk (optional)
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Wash the spinach thoroughly and chop the potatoes into bite-sized pieces.
  2. Heat vegetable oil in a large pan over medium heat. Add chopped onions and sauté until golden brown (about 5-7 minutes).
  3. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  4. Add cumin, coriander, and turmeric; mix well before incorporating the diced potatoes. Cook for about 1-2 minutes.
  5. Gradually add spinach and stir until wilted (about 3-4 minutes). If using coconut milk, pour it in now.
  6. Cover the pan and let it simmer on low heat for about 15-20 minutes or until potatoes are fork-tender.
