- 1-inch piece fresh ginger, grated
- 2 tsp cumin seeds
- 2 tsp coriander powder
- 1 tsp turmeric powder
- 1 cup full-fat coconut milk (optional)
- 2 tbsp vegetable oil
- Salt to taste

- Wash the spinach thoroughly and chop the potatoes into bite-sized pieces.
- Heat vegetable oil in a large pan over medium heat. Add chopped onions and sauté until golden brown (about 5-7 minutes).
- Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Add cumin, coriander, and turmeric; mix well before incorporating the diced potatoes. Cook for about 1-2 minutes.
- Gradually add spinach and stir until wilted (about 3-4 minutes). If using coconut milk, pour it in now.
- Cover the pan and let it simmer on low heat for about 15-20 minutes or until potatoes are fork-tender.
