Ingredients

Scale
  • 1 lb beef sirloin, thinly sliced
  • 2 cups bell peppers (mixed colors), chopped
  • 1 cup jasmine or basmati rice
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the rice: Rinse the rice under cold water until clear. Combine with 2 cups of water in a pot. Bring to a boil, then reduce heat to low and cover for about 15 minutes.
  2. Sauté the beef: Heat oil in a skillet over medium-high heat. Add beef strips seasoned with salt and pepper; sear for about 3 minutes until browned but not fully cooked.
  3. Add vegetables: Stir in chopped bell peppers, garlic, and ginger; cook for an additional 2 minutes until fragrant.
  4. Create the sauce: Pour in soy sauce and sesame oil, scraping up any bits from the pan. Cook for another 3 minutes until beef is fully cooked.
  5. Serve: Fluff the rice with a fork, spoon into bowls, top with beef mixture, garnish with green onions and red pepper flakes if desired.
