- 2 tsp paprika
- 2 cups kale or spinach (chopped)
- 2 tbsp extra virgin olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes).
- Add diced carrots and celery; stir for another 4 minutes until softened.
- Mix in minced garlic; sauté until fragrant.
- Stir in drained chickpeas and diced tomatoes, juices included.
- Pour in vegetable broth and add cumin and paprika; bring to a simmer.
- Reduce heat and simmer for 20-30 minutes.
