Ingredients

  • 2 cups canned chickpeas (drained, rinsed)
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 cups kale or spinach (chopped)
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Add diced carrots and celery; stir for another 4 minutes until softened.
  3. Mix in minced garlic; sauté until fragrant.
  4. Stir in drained chickpeas and diced tomatoes, juices included.
  5. Pour in vegetable broth and add cumin and paprika; bring to a simmer.
  6. Reduce heat and simmer for 20-30 minutes.
  7. Stir in kale or spinach just before serving.
