  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • Pinch of sea salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel and chop sweet potatoes, then steam until tender (about 15 minutes). Mash until smooth.
  3. Melt dark chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each.
  4. In a large bowl, mix mashed sweet potatoes, melted chocolate mixture, maple syrup, and vanilla until smooth.
  5. Sift together cocoa powder, almond flour, baking powder, and sea salt; fold into wet ingredients without overmixing.
  6. Pour batter into a greased parchment-lined baking pan and bake for 25-30 minutes or until a toothpick comes out mostly clean.
