  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 24 oz cream cheese, softened
  • ¾ cup brown sugar
  • 1 cup sour cream
  • 1 cup chopped toasted pecans
  • 2 tsp pure vanilla extract
  • 3 large eggs (room temperature)
  • 1 cup corn syrup
  • ½ cup heavy cream (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press mixture into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Let cool completely.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add granulated and brown sugar until fluffy.
  4. Add eggs one at a time, mixing gently after each addition. Stir in sour cream and vanilla extract until smooth.
  5. In another bowl, combine chopped pecans with corn syrup and additional brown sugar until coated.
  6. Pour half of the cheesecake filling into the cooled crust. Layer with half of the pecan mixture, then top with remaining filling and pecans.
  7. Bake at 325°F (160°C) for 50-60 minutes until set but slightly jiggly in the center. Cool completely before refrigerating overnight.
  8. Drizzle heavy cream over slices before serving.
