- 24 oz cream cheese, softened
- ¾ cup brown sugar
- 1 cup sour cream
- 1 cup chopped toasted pecans
- 2 tsp pure vanilla extract
- 3 large eggs (room temperature)
- 1 cup corn syrup
- ½ cup heavy cream (for drizzling)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press mixture into the bottom of a springform pan.
- Bake the crust for about 10 minutes until golden brown. Let cool completely.
- In a mixing bowl, beat softened cream cheese until smooth. Gradually add granulated and brown sugar until fluffy.
- Add eggs one at a time, mixing gently after each addition. Stir in sour cream and vanilla extract until smooth.
- In another bowl, combine chopped pecans with corn syrup and additional brown sugar until coated.
- Pour half of the cheesecake filling into the cooled crust. Layer with half of the pecan mixture, then top with remaining filling and pecans.
- Bake at 325°F (160°C) for 50-60 minutes until set but slightly jiggly in the center. Cool completely before refrigerating overnight.
- Drizzle heavy cream over slices before serving.
