  • 16 oz cream cheese (softened)
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • ⅔ cup brown sugar (dark)
  • ⅓ cup light corn syrup

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until moistened. Press into the bottom of a springform pan.
  3. Bake crust for 8-10 minutes until golden brown; cool completely.
  4. Beat softened cream cheese until smooth; add sour cream, granulated sugar, and vanilla extract until velvety.
  5. Add eggs one at a time, mixing gently.
  6. In another bowl, combine chopped pecans with brown sugar and corn syrup.
  7. Pour cream cheese mixture over crust; top with pecan mixture.
  8. Bake for 50-60 minutes until edges are set but center jiggles slightly.
  9. Cool completely before removing from pan; refrigerate for at least 4 hours.
