Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp peppermint extract
  • 1 cup all-purpose flour (sifted)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup chocolate chips
  • 2 large eggs
  • 1/4 tsp salt
  • Crushed peppermint candy canes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. For the shortbread layer, cream together softened butter and granulated sugar until fluffy. Add peppermint extract and mix well. Gradually incorporate flour until combined. Press the mixture evenly into the prepared pan and bake for 15 minutes until lightly golden.
  3. For the brownie layer, melt unsweetened chocolate with butter over low heat until smooth. Stir in brown sugar followed by eggs one at a time until well combined. Sift together cocoa powder and flour before folding into the batter. Pour over cooled shortbread layer and bake for an additional 25-30 minutes until set but still soft in the center.
  4. Melt chocolate chips for the glaze, pour over brownies, and spread evenly. Sprinkle crushed candy canes on top if desired. Allow to cool completely before cutting into squares.
