  • 2 lbs Yukon Gold or Russet potatoes, peeled and thinly sliced
  • 2 cups heavy cream
  • 1 cup aged cheddar cheese, grated
  • 1 cup Gruyère cheese, grated
  • 1 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp unsalted butter (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the potatoes thinly (about 1/8 inch).
  3. In a saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Whisk in heavy cream until warmed.
  4. Add cheddar, Gruyère, and Parmesan cheeses to the cream mixture; stir until melted and smooth. Season with salt and pepper.
  5. In a greased baking dish, layer half of the potato slices evenly. Pour half of the cheese sauce over them. Repeat with remaining potatoes and sauce.
  6. Cover with foil and bake for 45 minutes. Remove foil; bake an additional 20 minutes until golden brown.
