  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz whole wheat penne pasta
  • 1 cup fresh asparagus, chopped
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente (about 10 minutes). Drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil. Season chicken breasts with salt and pepper and cook until golden brown on both sides (6-7 minutes per side). Remove from pan and slice.
  3. In the same skillet, sauté minced garlic and sliced mushrooms until golden brown. Add chopped asparagus and cook until bright green and tender-crisp.
  4. Pour in heavy cream and stir to combine with the vegetables. Return sliced chicken to the skillet along with the cooked penne; toss everything in the creamy sauce.
