- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes, chopped (oil-packed for richness)
- 2 cups fresh spinach
- 1 cup heavy cream
- 8 oz pasta (fettuccine or penne)
- 1 cup freshly grated Parmesan cheese
- 2 tsp dried Italian herbs (basil, oregano, thyme)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook until golden brown (6-7 minutes per side). Remove and set aside.
- In the same skillet, sauté minced garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
- Add fresh spinach and stir until wilted (about 2-3 minutes).
- Pour in heavy cream and add dried herbs; stir continuously until heated through (about 5 minutes).
- Meanwhile, cook pasta according to package directions until al dente; drain. Toss cooked pasta into the sauce along with Parmesan cheese until well coated.
- Slice the cooked chicken and place it on top of the pasta before serving hot.
