  • 1 medium head of cauliflower (about 600g), cut into florets
  • 2 tsp cumin seeds, toasted
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 100g feta cheese, crumbled
  • 2 tbsp plain Greek yogurt
  • Juice of 1 lemon (about 2 tbsp)
  • Fresh parsley or dill, chopped (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, cumin seeds, salt, and pepper in a large bowl until evenly coated.
  3. Spread the seasoned cauliflower on the baking sheet in a single layer. Roast for 25-30 minutes, turning halfway through, until tender and golden brown.
  4. While the cauliflower roasts, blend feta cheese, Greek yogurt, lemon juice, salt, and pepper in a food processor until creamy.
  5. Once roasted, transfer cauliflower to a serving platter and dollop whipped feta on top. Garnish with fresh herbs if desired.
