  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp lemon zest (from fresh lemons)
  • ¾ cup limoncello liqueur
  • 1 cup unsalted butter (softened)
  • 4 large eggs
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • Fresh lemons (for juice)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a bowl, sift together flour, baking powder, salt, and lemon zest.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time followed by the limoncello.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  6. For frosting, whip mascarpone cheese and heavy cream until soft peaks form. Gradually add powdered sugar until smooth.
  7. Once cooled, layer cakes with frosting in between and top with additional frosting or lemon zest.
