  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs
  • 1/2 cup limoncello
  • 1 cup mascarpone cheese
  • Zest and juice of 2 fresh lemons
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, whisk together the cake flour, baking powder, and a pinch of salt.
  3. In another bowl, beat butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, mixing well after each addition. Then mix in limoncello, lemon juice, and zest.
  5. Gradually incorporate dry ingredients into the wet mixture alternately with milk until just combined.
  6. Divide batter into prepared pans and bake for 25-30 minutes or until golden brown.
  7. For the frosting, whip heavy cream until soft peaks form; fold in mascarpone cheese, sugar, limoncello, vanilla extract, and lemon zest.
  8. Once cooled, frost between layers and on top of the cake as desired.
