  • 1 cup graham cracker crumbs
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 cup mini marshmallows
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, cocoa powder, sugar, and melted butter in a bowl; mix until it resembles wet sand.
  3. Press the mixture firmly into the bottoms of mini muffin tins and bake for 8 minutes.
  4. In another bowl, beat softened cream cheese and sour cream until smooth; gradually add vanilla extract and sugar until creamy.
  5. Fold in mini chocolate chips and marshmallows.
  6. Spoon filling into cooled crusts, filling them about three-quarters full.
  7. Bake for 12–15 minutes until set but soft in the center; cool completely before refrigerating for at least two hours.
