  • 4 boneless, skinless chicken breasts
  • 1 pinch high-quality saffron threads
  • 1 cup Greek yogurt
  • 2 tbsp fresh lemon juice
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup basmati rice

Instructions

  1. In a bowl, whisk together Greek yogurt, lemon juice, minced garlic, soaked saffron threads, olive oil, salt, and pepper until smooth. Coat the chicken breasts in the marinade and refrigerate for at least 1 hour or overnight.
  2. Rinse 1 cup of basmati rice under cold water until clear. Combine with 2 cups water and a pinch of salt in a pot. Bring to a boil, then reduce heat to low and simmer covered for about 15 minutes until fluffy.
  3. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken breasts for about 5-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
  4. Let the chicken rest briefly before serving on a bed of basmati rice. Garnish with chopped parsley or toasted almonds if desired.
