- 4 boneless, skinless chicken breasts
- 1 pinch high-quality saffron threads
- 1 cup Greek yogurt
- 2 tbsp fresh lemon juice
- 4 garlic cloves, minced
- 2 tbsp olive oil
- Salt & pepper to taste
- 1 cup basmati rice
Instructions
- In a bowl, whisk together Greek yogurt, lemon juice, minced garlic, soaked saffron threads, olive oil, salt, and pepper until smooth. Coat the chicken breasts in the marinade and refrigerate for at least 1 hour or overnight.
- Rinse 1 cup of basmati rice under cold water until clear. Combine with 2 cups water and a pinch of salt in a pot. Bring to a boil, then reduce heat to low and simmer covered for about 15 minutes until fluffy.
- Heat olive oil in a skillet over medium-high heat. Cook marinated chicken breasts for about 5-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
- Let the chicken rest briefly before serving on a bed of basmati rice. Garnish with chopped parsley or toasted almonds if desired.
