  • 8 oz fresh cremini or button mushrooms (sliced)
  • 2 sheets puff pastry (thawed)

  • 3 cloves garlic (minced)
  • 1 tsp fresh thyme or parsley (chopped)
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 egg (for egg wash)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, add olive oil and sauté chopped onion until translucent, about 5 minutes. Add minced garlic and cook until fragrant.
  3. Add diced chicken thighs; season with salt and pepper. Cook for 7-8 minutes until no pink remains.
  4. Stir in sliced mushrooms and thyme or parsley; cook until tender, about 5 minutes.
  5. Pour in chicken broth and heavy cream; simmer for about 5 minutes until slightly thickened.
  6. Roll out puff pastry on a floured surface, cut into squares or circles, and fill with the chicken mixture. Seal edges with a fork.
