Ingredients

  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1/4 cup balsamic vinegar
  • 1 lb baby potatoes, halved
  • 2 sprigs fresh rosemary
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp honey

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, honey, salt, and pepper.
  3. Marinate chicken thighs in half the marinade for at least 30 minutes.
  4. Toss halved baby potatoes in remaining marinade.
  5. Arrange marinated chicken on one side of a sheet pan and seasoned potatoes on the other.
  6. Bake for 35-40 minutes until chicken reaches an internal temperature of 165°F (75°C) and is caramelized.
