  • 1 lb lean ground beef
  • 1 cup Italian-style breadcrumbs
  • 2 large eggs
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/4 cup fresh basil (chopped)
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves (minced)
  • 1 medium onion (chopped)
  • 1/4 cup ketchup
  • 1/4 cup pine nuts (toasted)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté chopped onion and minced garlic in olive oil until translucent.
  3. In a large bowl, combine ground beef, breadcrumbs, eggs, sautéed onions, sun-dried tomatoes, basil, Parmesan cheese, salt, pepper, and pine nuts. Mix until well combined.
  4. Shape the mixture into a loaf on a parchment-lined baking sheet.
  5. Spread ketchup over the top as a glaze.
  6. Bake for 60-70 minutes or until internal temperature reaches 160°F (70°C).
