Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 1 cup fresh green beans, trimmed
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Toss sweet potatoes with olive oil, salt, pepper, and paprika. Spread them in the baking dish.
  3. Blanch green beans in boiling water for 3 minutes; drain and add on top of sweet potatoes.
  4. In a bowl, mix heavy cream with garlic powder, salt, and pepper. Pour over the vegetables.
  5. Sprinkle cheddar cheese on top. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake for an additional 20 minutes until golden brown.
