- 2 cups sweet potatoes, peeled and diced
- 1 cup fresh green beans, trimmed
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
- Toss sweet potatoes with olive oil, salt, pepper, and paprika. Spread them in the baking dish.
- Blanch green beans in boiling water for 3 minutes; drain and add on top of sweet potatoes.
- In a bowl, mix heavy cream with garlic powder, salt, and pepper. Pour over the vegetables.
- Sprinkle cheddar cheese on top. Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 20 minutes until golden brown.
