- 14 oz firm tofu, cubed
- 1 cup unsalted cashews
- 1 cup red bell pepper, sliced
- 1 cup yellow bell pepper, sliced
- 1 medium zucchini, thinly sliced
- 4 green onions, chopped
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp toasted sesame oil
- 1 tsp cornstarch
Instructions
- Press the tofu between paper towels to remove excess moisture. Cube the tofu.
- Heat oil in a skillet over medium heat. Add cubed tofu and cook until golden brown on all sides (approx. 10 minutes).
- Add minced garlic, bell peppers, and zucchini; sauté for about 3-4 minutes until tender.
- In a bowl, whisk together soy sauce, honey/maple syrup, sesame oil, and cornstarch until smooth. Pour over the tofu and veggies.
- Stir in cashews and cook for another 2-3 minutes until heated through.
- Garnish with chopped green onions and serve hot over rice or noodles.
