  • 14 oz firm tofu, cubed
  • 1 cup unsalted cashews
  • 1 cup red bell pepper, sliced
  • 1 cup yellow bell pepper, sliced
  • 1 medium zucchini, thinly sliced
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp toasted sesame oil
  • 1 tsp cornstarch

Instructions

  1. Press the tofu between paper towels to remove excess moisture. Cube the tofu.
  2. Heat oil in a skillet over medium heat. Add cubed tofu and cook until golden brown on all sides (approx. 10 minutes).
  3. Add minced garlic, bell peppers, and zucchini; sauté for about 3-4 minutes until tender.
  4. In a bowl, whisk together soy sauce, honey/maple syrup, sesame oil, and cornstarch until smooth. Pour over the tofu and veggies.
  5. Stir in cashews and cook for another 2-3 minutes until heated through.
  6. Garnish with chopped green onions and serve hot over rice or noodles.
