  • 2 cups fresh celery (chopped)
  • 2 cups English cucumbers (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Wash and chop the celery and cucumbers; halve the cherry tomatoes; thinly slice the red onion; and chop the parsley.
  2. In a large bowl, combine the chopped celery, cucumber slices, cherry tomatoes, and red onion.
  3. Add the chopped parsley on top of the vegetable mix.
  4. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  5. Pour the dressing over the salad mix and toss gently until everything is well coated.
  6. For an extra refreshing experience, chill in the fridge for about 30 minutes before serving.
