Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh cucumbers, diced
- 1 cup plain Greek yogurt (whole-milk)
- 2 tbsp fresh dill, chopped
- 2 garlic cloves, minced
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
- Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C). Let rest before shredding.
- In a bowl, mix Greek yogurt, garlic, grated cucumber (squeezed dry), lemon juice, olive oil, dill, salt, and pepper until combined.
- Shred the cooled chicken into bite-sized pieces and toss with half of the tzatziki sauce.
- Combine shredded chicken with diced cucumbers in a large bowl; drizzle remaining tzatziki sauce over it.
- Toss gently until well mixed; serve chilled or at room temperature.
