  • 2 cups water
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh mint leaves, chopped
  • Juice of 2 limes
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water in a fine mesh strainer to remove bitterness. In a saucepan, combine rinsed quinoa and water. Bring to a boil, then cover and simmer on low for 15 minutes until fluffy.
  2. While quinoa cooks, prepare the fresh ingredients: dice cucumber, halve cherry tomatoes, and chop red onion (soak in cold water if desired).
  3. Transfer cooled quinoa to a large bowl. Add cucumber, cherry tomatoes, red onion, and mint.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over salad mixture and toss gently.
  5. Let the salad sit for about 10 minutes to allow flavors to meld before serving chilled or at room temperature.
