  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 cans (14.5 oz each) canned diced tomatoes
  • 1 cup heavy cream
  • 2 tsp Italian seasoning blend
  • 4 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Dice garlic finely and chop chicken into large pieces.
  2. Place chicken in the crockpot; add diced tomatoes (with juice), garlic, Italian seasoning, salt, and pepper. Stir gently.
  3. Pour heavy cream over the mixture.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
