  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh sweet corn (about 2 ears)
  • Juice of 2 limes
  • 2 tsp chili powder
  • ½ cup crumbled cotija cheese
  • ¼ cup chopped fresh cilantro
  • ½ medium red onion, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by mixing lime juice, chili powder, salt, and pepper in a bowl. Add chicken breasts and let marinate for at least 30 minutes.
  2. In a skillet over medium-high heat, heat olive oil. Sear marinated chicken for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  3. While the chicken cooks, grill or sauté corn until tender and slightly charred.
  4. Dice red onion and chop cilantro during cooking for efficiency.
