  • 4 medium carrots, peeled and chopped
  • 2 lbs Yukon Gold potatoes, quartered
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp fresh thyme leaves
  • 2 tsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Chop vegetables and measure out ingredients.
  2. Sear the Roast: Heat olive oil in a Dutch oven over medium-high heat. Sear the chuck roast on all sides until browned.
